Mirror glazing is the latest craze in cake design, creating stunning shine glazes on cakes that have a reflective surface. These magnificent mirror cakes use a baking technique that isn’t new, but that has recently been perfected by Russian pastry chef Olga Noskova, whose designs have been taking the cake world by storm. The technique used to make mirror glazes on cakes is not new – it’s been around in French baking for 40 odd years, but what Olga has done is created some stunning designs that are unseen up until now. The glaze is made of gelatin, sugar and water and is poured over a cream cake. You cannot achieve the mirror glazing on a sponge cake as the glazing will simply seep inside. What Olga has done to create intricate patterns, swirls and shapes is beautiful and mesmermising. We love it when a cake artisan is able to take the world by storm!
The Culinary Institute of America has provided this recipe of a chocolate mirror glaze for you to try at home:
Chocolate Glaze (Ultra Shine)
Yield: 2 quarts
Total prep time: 10 minutes
- 2 pounds, 4 ounces sugar
- 1 pound, 3 ounces water
- 11 ounces Dutch cocoa
- 11 ounces crème fraiche
- 20 gelatine sheets or leaves (available at specialty stores)
- 8 ounces Peter’s chocolate
1. Bloom the gelatine in water (follow package directions).
2. Boil the sugar, water, cocoa and crème fraiche.
3. Squeeze out the excess water from the gelatine and add. Strain through a chinois.
4. Cool the glaze to 120°F before applying.
Note: Use a double boiler to re-warm.
